Whole Wheat Chocolate Chip Cookies

Ingredients

  • 1/2 cup brown sugar packed
  • 1/2 cup melted coconut oil
  • 1/2 tablespoon vanilla extract
  • 1 large egg room temperature
  • 1 1/4 cups + 2 tablespoons whole wheat flour spoon and level to measure (see notes in post above)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips
  • Maldon sea salt for topping

Instructions

  • Pre-heat oven to 350 degrees F and line a baking sheet with a silicone baking mat. Set aside.
  • In a medium sized bowl, use a hand mixer to cream together brown sugar, coconut oil, vanilla, and egg.
  • Beat in whole wheat flour, baking soda, and salt.
  • Stir in chocolate chips.
  • Use a large cookie scoop to scoop cookie dough onto prepared baking sheet.
  • Bake in preheated oven for about 8 minutes.
  • Remove from oven and top with a sprinkle of maldon sea salt.
  • Cool slightly and serve!
  • Optional - serve as ice cream sandwiches!
