Whole Wheat Oatmeal Chocolate Chip Cookie Bars

A health-ier take on a classic, these Whole Wheat Oatmeal Chocolate Chip Cookie Bars are full of chewy oats, nutty whole wheat flour, coconut oil, and dark chocolate chunks. While they may be lighter in calories, they're absolutely PACKED with flavor. Ice cream optional, but highly recommended. :)

Ingredients

  • 2 cups  Bob’s Red Mill Organic Regular Rolled Oats
  • 1/2 cup  Bob's Red Mill Whole Wheat Flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup dark brown sugar packed
  • cup dark chocolate chunks
  • 1 large large egg whisked
  • 1/2 cup coconut oil melted
  • 1 teaspoon  vanilla extract
  • 2 tablespoons buttermilk

Instructions

  • Pre-heat oven to 350 degrees F and grease an 8x8 nonstick square baking pan with cooking spray. Set aside.
  • In a large bowl, whisk together oats, flour, baking soda, salt, cinnamon, brown sugar, and chocolate until combined.
  • Add in egg, coconut oil, vanilla, and buttermilk.
  • Stir together until well combined.
  • Pour mixture into prepared pan.
  • Grease hands with cooking spray and gently pat down the mixture until it’s in an even layer in the pan.
  • Bake in pre-heated oven for 20 minutes.
  • Remove from oven and place the pan on a wire rack.
  • Cool completely for about 30 minutes to an hour.
  • Cut into bars and serve at room temperature or warm with ice cream!

Notes

You can definitely cut the bars smaller to lessen the calories per serving. :) I just like really big dessert bars!
