Ingredients

  • 3 cups old fashioned oats
  • 1/2 cup almonds roughly chopped (measured before chopping)
  • 1/2 cup pecans roughly chopped (measured before chopping)
  • 1/2 cup pistachios roughly chopped (measured before chopping)
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup dark brown sugar packed
  • 1/2 teaspoon salt
  • 3/4 cup melted coconut oil
  • 2 tablespoons honey
  • 2 tablespoon maple syrup
  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 300 degrees.
  • Mix oats, pecans, pistachios, cocoa powder, brown sugar, and salt together. Set aside.
  • Whisk together the coconut oil, honey, and maple syrup until smooth.
  • Pour the coconut oil mixture over the oat mixture and stir until moistened.
  • Spread the mixture evenly on an unlined, rimmed baking sheet. It should be a thin, single layer.
  • Bake for 40 minutes Stirring every 20 minutes.
  • Remove the granola from the oven and gently stir in the semi sweet chocolate chips. Try to not stir too much, so you can get those really yummy clumps. Let it cool completely* and enjoy!

Notes

*This does take a while to cool. I let it sit out all day to harden, although, it's really delicious when it's warm and gooey too ;)
