- 1 cup granulated sugar
- 1 cup brown sugar packed
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsalted butter
- 1/2 cup milk
- 1/4 teaspoon salt
- 3 cups quick cooking oats
- 1/2 cup peanut butter
- 2 teaspoons vanilla extract
Combine sugars, cocoa, butter, milk, and salt in a medium saucepan. Bring to a boil over high heat. Stir constantly.
Once rapid bubbles have formed, start your timer and keep at a boil for 90 seconds - 2 minutes, stirring regularly.
Remove from heat and add quick cooking oats, peanut butter, and vanilla.
Mix well.
Working quickly, use a cookie scoop to scoop cookies onto waxed paper.
Let cool completely.
