Ingredients

  • 2 cups non fat plain greek yogurt
  • 2 cups diced cucumbers seeded
  • 2 tablespoons olive oil
  • 1/2 cup reduced fat feta cheese crumbled
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • salt and pepper to taste **
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried dill
  • 3 cloves garlic finely minced or pressed

Instructions

  • In a large bowl, stir together all ingredients.
  • Taste and re-season if necessary.
  • Cover and place in the fridge until chilled.
  • Serve with pita bread, meat, etc.
  • Store in the fridge, covered, in an airtight container.

Notes

*To prep the cucumbers: Remove the ends of the cucumber. Slice the cucumber in half lengthwise. Use a spoon to scoop out the seeds! Dice and continue with recipe.
**I used 1 teaspoon of salt and 1/4 teaspoon black pepper
