- 5-10 mint leaves
- 1/2 oz freshly squeezed lime juice
- 3/4 - 1 1/2 oz simple syrup
- 3 oz watermelon juice **
- 1 1/2 oz white rum
- 3 oz Barefoot Bubbly Pinot Grigio
In a short cocktail glass, muddle mint leaves.
Pour in lime juice, simple syrup, watermelon juice, and rum.
Stir.
Top with ice.
Pour in pinot grigio and enjoy!

*3/4 oz for a less sweet drink, 1 and 1/2 oz for a sweeter drink. I always recommend starting with less and adding to taste. To make: place equal parts sugar and water (example 1 cup sugar, 1 cup water) in a large microwave safe dish. Microwave until sugar dissolves, about 2 minutes. Cool and store leftovers in an airtight container in the fridge.
**To make watermelon juice: place fresh watermelon chunks into your high powdered blender. Blend until smooth. Use a sieve to strain out the pulp. Proceed with recipe. Store leftover juice in an airtight container in the fridge.
