Antipasto Chicken Salad
- 4-6 cups roughly chopped lettuce
- 1/2 cup roughly chopped roasted red peppers
- 1 cup roughly chopped cherry tomatoes
- 1 cup sliced red onion
- 1/2 cup roughly chopped pepperoni I used turkey pepperoni
- 1/2 cup roughly chopped salami
- 3/4 pounds cooked chicken I used rotisserie, the original recipe calls for grilled chicken
- 1 cup cubed fresh mozzarella cheese optional
- 1 teaspoon Italian seasoning
- fresh basil leaves for garnish
Basil Balsamic Dressing
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons finely chopped fresh basil
- 1 teaspoon Italian seasoning
Antipasto Chicken Salad
Arrange the salad: divide the lettuce between two plates. Top with peppers, tomatoes, onions, pepperoni, salami, chicken, and optional fresh mozzarella.
Sprinkle the Italian seasoning on top and garnish with fresh basil.
Basil Balsamic Dressing
Whisk together the dressing ingredients.
Pour over the salad and serve immediately.
