Waffle Sausage Breakfast Casserole Recipe

Ingredients

  • 1 (12 oz) roll breakfast sausage
  • 8 large eggs
  • 2 cups whole milk
  • 1 teaspoon salt more or less to taste
  • 1/2 teaspoon pepper
  • 2 Green onions sliced
  • 1 (8 oz) bag shredded sharp cheddar cheese
  • 1 (12 oz) package frozen Homestyle Ego Waffles cut into 1-inch cubes (10 waffles)
  • maple syrup

Instructions

  • Preheat oven to 375 degrees F.
  • Cook sausage over medium heat, breaking it up as you go, in an oven safe 10 inch cast iron skillet.*
  • Once cooked, drain the fat (leave just enough to grease the pan, so food doesn't stick), and set aside.
  • In a large bowl, whisk together eggs, milk, salt, and pepper.
  • Stir in green onions, cheese, waffle cubes, and cooked sausage.
  • Pour into skillet and bake for 30 minutes in preheated oven.
  • Cover with tin foil and bake an additional 30 minutes.
  • Serve with maple syrup and enjoy!

Notes

*If you don't have an oven safe skillet, cook sausage in a large saute pan, and grease a large oven safe baking dish with cooking spray.
