  • 4 slices roma tomato I needed less than 1 roma tomato
  • 1/2 tablespoon extra virgin olive oil
  • 1/2 tablespoon balsamic vinegar
  • 1 clove garlic minced or pressed
  • salt to taste
  • 2 slices bread
  • 2 tablespoons basil pesto
  • 2 slices mozzarella cheese I sliced a fresh mozzarella ball
  • 2 tablespoons unsalted butter

  • In a small bowl, gently stir together tomatoes, oil, vinegar, garlic, and salt, to taste. Set aside.
  • Spread pesto on one side of each piece of bread.
  • Top one side with mozzarella and tomatoes.
  • Top with remaining piece of bread. Set aside.
  • Melt butter in a non-stick saute pan over medium heat.
  • Place sandwich in pan and cook until golden brown.
  • Flip and continue cooking until the other side is golden brown and the cheese is fully melted.*
  • Slice and serve!

*If your bread gets golden before the inside is warm and melty, you can finish heating sandwich on an unlined baking sheet in the oven at 375 degree F for 5-10 minutes.
Nutritional information is a VERY rough guesstimate. It will depend on what bread and how much cheese you use.
