- 1 (12 oz) package fully cooked sun dried tomato chicken sausage cut into 1/2 inch rounds (could use another flavor of choice)
- 1 yellow onion sliced
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 yellow bell pepper sliced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt plus more to taste
- 1/2 teaspoon pepper
Preheat oven to 400 degrees F and line a rimmed baking sheet with a silicone baking mat or parchment paper.
Place chicken sausage, onion, and peppers onto prepared baking sheet.
Drizzle with olive oil and sprinkle with spices.
Toss to fully coat the chicken and veggies.
Make sure the chicken and veggies are evenly spread in a single layer.
Bake in preheated oven for 20 minutes, or until veggies are tender and cooked to your liking, stirring halfway through.
