Ingredients

Flax Egg:

  • 1 tablespoon golden flaxseed meal
  • 3 tablespoons water

Healthy Double Chocolate Almond Butter Cookies

  • 1/2 cup cocoa powder
  • teaspoon  baking soda
  • 1/4 teaspoon salt
  • cup  smooth almond butter make sure you’re using the just nuts variety (mine was runny, but cold from the fridge)
  • 1/4 cup honey
  • 1 tablespoon vanilla extract
  • 1/2 cup  dark chocolate chips
  • Maldon sea salt optional for topping

Instructions

Flax Egg:

  • Place 1 tablespoon golden flaxseed meal into a large bowl.
  • Stir in 3 tablespoons water.
  • Let sit for 15 minutes.

Healthy Double Chocolate Almond Butter Cookies:

  • Preheat oven to 350 degrees F and line 2 rimmed baking sheets with silicone baking mats.
  • To the flax egg (directions above), add in cocoa powder, baking soda, salt, almond butter, honey, and vanilla extract.
  • Use your hand mixer to beat mixture together until well combined.
  • Beat in dark chocolate chips.
  • Use a medium sized cookie scoop to scoop dough into 18 cookie dough balls.
  • Place 9 of the cookie dough balls onto each of the prepared baking sheets.
  • Working with one sheet at a time, bake cookies in preheated oven for 8 minutes.
  • Remove from oven and top with a sprinkle of optional maldon sea salt.
  • Repeat with remaining cookies.
  • Cool slightly and enjoy!
  • Store leftovers in an airtight container at room temperature.

Notes

Keep in mind these are VERY lightly sweetened from the honey, but the addition of dark chocolate chips makes these perfect, I think.
