Spicy Tuna Roll Stuffed Avocados
A spicy tuna roll inspired filling: olive oil mayo, sriracha, vinegar, soy sauce, sesame oil, canned cooked tuna, cucumber, and red bell pepper stuffed into an avocado for a quick, easy, healthy, meal prep, make ahead lunch!

Ingredients
  • 5 tablespoons  olive oil based mayonnaise
  • 1/2 tablespoon  Sriracha plus more to taste (I love 2 tablespoons)
  • 3 tablespoons  seasoned rice vinegar
  • teaspoons  soy sauce or gluten free alternative
  • teaspoons  sesame oil
  • 4 (5 oz) cans tuna drained
  • 1/2 cup diced cucumber
  • 1/2 cup diced red bell pepper
  • Cilantro for garnish
  • Sesame Seeds for garnish
  • Red onion for garnish
  • Avocado as a vessel, if desired
Instructions
  1. Place mayo, sriracha, rice vinegar, soy sauce, and sesame oil into a large bowl.
  2. Whisk to combine.
  3. Stir in tuna, cucumber, and bell pepper.
  4. Cover and place in fridge until ready to eat.
  5. Taste and re-season, if necessary.
  6. If desired: halve and pit an avocado(s) and stuff halves with the tuna filling.
  7. Garnish with cilantro, sesame seeds, red onion, and serve!

Notes

Nutritional information does not include avocado and is based on using a light olive oil mayo. It's for 1/4th of the filling.
