Lemon Garlic Chicken and Orzo Pasta

Ingredients

  • 1 cup orzo pasta uncooked
  • 2 tablespoons olive oil
  • 2 (8 oz) chicken breasts cubed
  • salt to taste
  • pepper to taste
  • 1/4 teaspoon red pepper flakes
  • 4 cloves garlic
  • 2 cups packed baby spinach
  • 1/2 cup parmesan
  • 1 tablespoon lemon juice or more to taste

Instructions

  • Cook pasta according to package directions, but use chicken broth instead of water for flavor if you have it! Set aside.
  • Heat oil in a large skillet over medium-high heat.
  • Add in chicken and season with salt and pepper.
  • Sauté until cooked through, about 5 minutes.
  • Stir in red pepper flakes and garlic and cook for 30 seconds.
  • Reduce heat to medium and add in cooked orzo and spinach. Cook until the spinach is wilted about 3-4 minutes.
  • Stir in the parmesan cheese until melted and fully incorporated into the pasta.
  • Remove from heat and add in lemon juice.
  • Taste and re season with salt if necessary!
