Kettle Chip Chicken Nachos. Jalapeno and Sea Salt Kettle Chips are piled with black beans, chicken, gooey cheese, sweet corn, dollops of sour cream, and some green chiles and jalapeños!

Ingredients

  • 1/2 bag Sea Salt Kettle Brand Chips
  • 1/2 bag Jalapeno Kettle Brand Chips
  • 2 cups cooked chicken cubed
  • 1 cup easy black beans recipe
  • 1 cup canned corn drained
  • 1/4 cup diced green chiles drained, 1/2 4 oz can
  • 1/4 oz diced jalapenos drained, 1/2 4 oz can
  • 2-3 cups shredded Mexican style cheese

Additional toppings, if desired

  • Diced avocado
  • chopped cilantro
  • Sour cream
  • salsa

Instructions

  • Preheat your oven's broiler (ours is at 500 degrees F).
  • Place chips in a single layer on a rimmed baking sheet.
  • Sprinkle on a thin layer of shredded cheese.
  • Top with cooked chicken, black beans, corn, diced green chiles, jalapenos, and the rest of the cheese.
  • Broil for about 90 seconds, or until the cheese is melty and everything has warmed through.
  • Remove from the oven and top with additional toppings, if desired: avocado, cilantro, sour cream, salsa.
  • Serve immediately!
