  • 2 tablespoons olive oil
  • 1 1/2 - 2 cups yellow onion diced, about 1 large onion
  • 1/4 teaspoon salt
  • 1-2 cloves garlic minced
  • 2 cups non fat plain greek yogurt
  • 1/4 cup light olive oil based mayonnaise
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  1. Heat a large saute pan over medium/medium low heat.
  2. Add in oil and turn to coat the pan.
  3. Add in onions and salt.
  4. Cook the onions for about 20 minutes, stirring occasionally, or until the onions are caramelized.
  5. In the last 30-60 seconds of cook time, stir in the garlic.
  6. Remove from heat and set aside to cool.
  7. Whisk together greek yogurt, mayo, cayenne, pepper, and salt.
  8. Stir in cooled onions.
  9. Cover, refrigerate, and stir again before serving with FSTG tortilla chips!*

*This is one of those dips that tastes even better the next day, because the flavors have a chance to build! :)
