Ingredients

Antipasto Chicken Salad

  • 4-6 cups roughly chopped lettuce
  • 1/2 cup roughly chopped roasted red peppers
  • 1 cup roughly chopped cherry tomatoes
  • 1 cup sliced red onion
  • 1/2 cup roughly chopped pepperoni I used turkey pepperoni
  • 1/2 cup roughly chopped salami
  • 3/4 pounds cooked chicken I used rotisserie, the original recipe calls for grilled chicken
  • 1 cup cubed fresh mozzarella cheese optional
  • 1 teaspoon Italian seasoning
  • fresh basil leaves for garnish

Basil Balsamic Dressing

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons finely chopped fresh basil
  • 1 teaspoon Italian seasoning

Instructions

Antipasto Chicken Salad

  • Arrange the salad: divide the lettuce between two plates. Top with peppers, tomatoes, onions, pepperoni, salami, chicken, and optional fresh mozzarella.
  • Sprinkle the Italian seasoning on top and garnish with fresh basil.

Basil Balsamic Dressing

  • Whisk together the dressing ingredients.
  • Pour over the salad and serve immediately.
