1. Olive Oil 2. Red Pepper 3. Green Pepper 4. Yellow Onion 5. Baby Spinach 6. Mushrooms 7. Garlic 8. Salt 9. Eggs

Sauté Vegetables

Add oil, red pepper, green pepper, and onion. Sauté 5-7 minutes.

More Veggies

Add spinach and mushrooms and cook an additional 2 minutes.

Garlic & Season

Add garlic and season with salt.

Whisk & Combine

Whisk eggs and egg whites in measuring cup then stir in veggies

Pour & Bake

Pour egg mixture evenly into prepared muffin pan. Bake 15-30 minutes at 350ºF.

Serve or Store

Cool slightly and serve. OR Refrigerate: 4-5 days Freeze: 3-4 months
