This is basically a more deconstructed cobb salad stuffed into a lettuce cup.

Because lettuce cups are better than a “regular” salad. 😉

You guys are always asking me for quick, easy, nutritious “non-boring” lunch options, so . . .

you ask . . .

Ingredients in walnut cobb salad lettuce wraps:

  • Bacon – turkey bacon is a great alternate too!
  • Hard boiled eggs – I always make a big batch at the beginning of the week, so I always have these on hand. #mealprepwin
  • Cooked chicken – for a quick and easy option, use leftover rotisserie!
  • Cherry tomatoes
  • Blue cheese
  • California walnuts
    • Walnuts add good fats, protein, and nutty deliciousness to these lettuce wraps.
    • Just 1 oz of walnuts has 13g polyunsaturated fat and 2.5g monounsaturated fat– including 2.5g omega-3 ALA – and 4g of protein.
  • Avocado
  • Green onions
  • Yogurt ranch dressing – I like using a yogurt based ranch to keep this recipe nutritious and delicious!
  • Lettuce, for lettuce cups

The best part about these lettuce wraps is how versatile they are! Use more or less of each ingredient to suit your needs.

Hate blue cheese? Use feta instead!

Love blue cheese? Use blue cheese dressing instead! Etc. The options are endless.

What’s the best lettuce for lettuce wraps?

  • Boston lettuce
  • Bibb lettuce
  • Butter lettuce
  • Living lettuce
  • Iceberg lettuce

Today, I used bibb lettuce, but if you want to keep this cobb salad more traditional, feel free to use iceberg OR use another lettuce listed above. The choice is yours!

How do i make walnut cobb salad lettuce wraps?

  1. Place chicken, bacon, hard boiled eggs, California walnuts, cherry tomatoes, avocado, green onions, and blue cheese into a large bowl.
  2. Toss to combine.
  3. Season with salt and pepper to taste.
  4. Tear a lettuce leaf off the head of lettuce (of your choice) and scoop the filling into a leaf.
  5. Repeat with remaining filling/leaves.
  6. Drizzle with yogurt ranch dressing, to taste. *If desired, you could toss the filling with yogurt ranch dressing before stuffing into the lettuce cups instead of drizzling.*
  7. Eat and enjoy!
  8. Store leftover filling in an airtight container in the fridge.

Again, this recipe is SO versatile, so feel free to use this as a jumping off point and make it your own.

Walnut Cobb Salad Lettuce Wraps

Walnut Cobb Salad Lettuce Wraps. All your favorite cobb salad ingredients: bacon, eggs, chicken, blue cheese, tomatoes, avocado, walnuts, and ranch dressing all stuffed into lettuce cups!

Ingredients

US Customary - Metric
  • 2 cups chopped cooked rotisserie chicken
  • 4 slices bacon diced
  • 2 large hard boiled eggs diced
  • ½ cup California walnuts roughly chopped
  • ½ cup cherry tomatoes sliced
  • ½ large avocado peeled, pitted, and diced

  • 4 green onions sliced (just the white and light green part)
  • ½ cup crumbled blue cheese
  • Salt and pepper to taste
  • Yogurt ranch dressing for serving
  • Head of lettuce Boston, Bibb, Butter, Living, or Iceberg lettuce to make the cups

Instructions

  • Place chicken, bacon, hard boiled eggs, California walnuts, cherry tomatoes, avocado, green onions, and blue cheese into a large bowl.
  • Toss to combine.
  • Season with salt and pepper to taste.
  • Tear a lettuce leaf off the head of lettuce (of your choice) and scoop the filling into a leaf.
  • Repeat with remaining filling/leaves.
