These Ritz Cracker Cookies really are the perfect sweet and salty, no-bake treat! Plus they’re made FOUR WAYS: Chocolate Peanut Butter, Fluffernutter, Cookie Butter, and White Chocolate Caramel.
I’m back with yet another cookie recipe. These ritz cracker cookies might just be my favorite, though, because guess what? They’re NO BAKE . . . which means your oven is wide open to make my other favorite christmas cookies: peanut butter blossoms, chocolate crinkle cookies, and cut out sugar cookies with cream cheese frosting.
You’ve probably had some version of these ritz cookies before. All you do is take two ritz crackers, slather on some peanut butter, sandwich the two crackers together, and then dip them in melted chocolate.
Today, we’re doing just that but making them FOUR different ways!
Recipe variations
I love to mix things up and use different fillings, different chocolates, and different toppings!
Filling Variations
Peanut butter is the classic filling for ritz cracker cookies, but let your imagination run wild. There are so many different delicious filling options! I recommend something thick and creamy for the best texture.
- Peanut butter
- Nutella
- Caramel
- Cookie butter
Chocolate Variations
If it melts smoothly in the microwave, then feel free to use it as your chocolate coating! I’ve found that almond bark melts the best, so I love to use that one!
- Chocolate almond bark
- White almond bark
- Candy melts
Topping Variations
I like adding a little crunch on top to contrast the buttery, flakey cracker and rich, creamy filling!
- Crushed peanuts
- Chocolate drizzle
- Sea salt
- Sprinkles
Here are the flavors we’re working with today:
- Classic (chocolate peanut butter).
- Fluffernutter (peanut butter, marshmallow, chocolate).
- Cookie butter and white chocolate.
- Salted caramel and white chocolate.

How to make ritz cracker cookies
These cookies could not get any easier! Again, feel free to mix and match different fillings, chocolates, and toppings!
- Place filling of choice onto one cracker. Top with another cracker, sandwiching the two crackers together.
- Freeze for 30 minutes.
- Dip in melted chocolate of choice and top with topping of choice.
- Freeze for 10 minutes.
- Store in the fridge until you’re ready to serve and enjoy!
The best part about this recipe is that you can make as few or as many as you like! Personally, I like making a dozen of each flavor, then I keep some for myself and give the rest away to neighbors and friends. 🙂

- Can I make this nut-free? If you’d like to make these nut-free, I’d recommend sunflower seed butter, cookie butter, or caramel.
- Can I make these gluten-free? Ritz crackers do contain gluten, but I’m sure there’s a variety of gluten-free crackers that could be used instead.
- Can I make these vegan? Use dairy-free chocolate to make these cookies vegan.
- Can I use a different cracker? I’d recommend using Ritz crackers for the best results, but feel free to play around! At the end of the day, you can’t go wrong with buttery, salty crackers, creamy filling, and chocolate!
- Can I use a different filling? Absolutely! Have fun. See recipe variations for my filling suggestions. Let me know in the comments below what filling you tried and loved!
- What kind of chocolate should I use? Use almond bark for the best results. It melts much better than chocolate chips. If you need to use chocolate chips, I’d recommend melting them with a little canola oil (start with a teaspoon and then add in very small amounts until it reaches the desired consistency.)

How do i store these cookies?
Because these cookies are SO durable, versatile, and easy, they’re great made in advance and stored in the fridge, but also great as a last-minute treat to be enjoyed at room temperature.
Store these ritz cookies in an airtight container at room temperature for up to a week (although the chocolate may soften), in the fridge for up to two weeks, or in the freezer for up to two months.
For best results, let them come to room temperature before re-serving from the freezer.

- chocolate almond bark melted
- crushed peanuts

- chocolate almond bark melted
- crushed ritz crackers
Cookie Butter
- 6 ritz crackers
- 3 tablespoon cookie butter
- white almond bark melted
- chocolate almond bark melted
White Chocolate Caramel
- 6 ritz crackers
- 3 tablespoon caramel apple dip the old fashioned kind found in the produce section (needs to be THICK)
- white almond bark melted
- maldon sea salt

Instructions
Chocolate Peanut Butter
- Place 1/2 tablespoon peanut butter onto 3 of the crackers. Top each with additional cracker to make 3 sandwiches.
- Freeze for 30 minutes.
- Dip in melted chocolate bark and top with crushed peanuts.
- Freeze for an additional 10 minutes.
- Serve and enjoy!
Fluffemutter
- Place 1 teaspoon peanut butter and 1 teaspoon marshmallow fluff onto 3 of the crackers. Top each with additional cracker to make 3 sandwiches.
- Freeze for 30 minutes.
- Dip halfway in melted chocolate bark and top with crushed ritz cracker.
- Freeze for an additional 10 minutes.
- Serve and enjoy!
Cookie Butter
- Place 1/2 tablespoon cookie butter onto 3 of the crackers. Top with additional cracker to make 3 sandwiches.
- Freeze for 30 minutes.
- Dip in melted white chocolate bark and drizzle with chcolate almond bark.
- Freeze for an additional 10 minutes.
- Serve and enjoy!
White Chocolate Caramel
- Place 1/2 tablespoon caramel apple dip onto 3 of the crackers. Top with additional crackers making 3 sandwiches.
- Freeze for 30 minutes.
- Dip halfway in melted white chocolate bark and top with Maldon sea salt.
- Freeze for an additional 10 minutes.
