These peanut butter cup stuffed brownie bites are ooey gooey at it’s finest! While these brownie bites would be great without the peanut butter cups, because they’re so moist and fudgy, the Reese’s really takes it to the next level! Biting into a rich, chewy brownie, and a melty peanut butter cup is pure heaven.
Just when I thought my mom’s one bowl brownies couldn’t possibly get any better, I stuffed them with a Reese’s peanut butter cup and made them mini. Oh yea. I went there. These, my friends, are what I call Peanut Butter Cup Stuffed Brownie Bites. Creative name, right? π
Reese’s Peanut Butter Cups have been, are, and will always be my favorite candy. In high school, we did magazine sales. For each magazine sold, we’d earn a point. Some days you could turn those points in for Carmellos, etc. But me? I always waited until Double Candy Day. Double Candy Day was also Reese’s PB Cup Day. That means that I would get #alltheReeses. Seriously, I would come home with boxes full of Reese’s. I would store them in the freezer, and literally eat a 3 pack a day. I’d warm them up in the microwave so they’d be extra gooey.
While I could sit here and write a thousand word love letter to Reese’s, I actually do have a recipe for you today. These peanut butter cup stuffed brownie bites start with my mom’s one bowl brownies.
The best part about one bowl brownies, other than the fact that you only need one bowl, is that you just dump all the ingredients into the bowl and whisk until combined. There’sΒ sugar, flour, cocoa powder, salt, eggs, oil, vanilla, and semi-sweet chocolate chips. No need to sift your dry ingredients, or crack in one egg at a time! Except, stir in your chocolate chips after the other ingredients have been fully incorporated.
Once your batter is made, prepare a mini muffin pan with cooking spray and preheat your oven to 350 degrees F. Scoop batter into the pan. I used this cookie scoop for easy distribution!
Fill the slots up about 1/2 – 3/4 of the way up, so there’s a little room for the peanut butter cup stuffed brownie bites to rise. Cook for 8 – 10 minutes, or until an inserted toothpick comes out almost clean. It’s ok if these are slightly underdone.
Once the brownies are done, gently push a peanut butter cup in the center of the brownie.
Let these set in the pan for a couple of minutes. Remove from the pan and let them cool the rest of the way on a cooling rack!

Peanut Butter Cup Stuffed Brownie Bites

Ingredients
- 2 cups granulated sugar
- 1 ΒΎ cups flour
- 5 large eggs
- 1 teaspoon salt
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- Β½ cup cocoa powder
- Β½ cup semi-sweet chocolate chips
- 60 mini peanut butter cups
Instructions
- Whisk together sugar, flour, eggs, salt, oil, vanilla, and cocoa powder until well combined. Stir in the semi sweet chocolate chips. Make sure to not over mix!
- Prepare a mini muffin pan with cooking spray and preheat your oven to 350 degrees F.
- Scoop batter into the pan.
