These Mini Breakfast Pizzas are my latest breakfast obsession. Pita topped with fresh pesto, savory sausage, melty mozzarella, and a gooey egg!

Meet my latest breakfast/brunch/dinner/lunch/linner/brinner and everything in between obsession: Mini Breakfast Pizzas.
Not only are they unbelievably delicious, they’re unbelievably quick and easy to make, which means they’re perfect for lazy weekend brunches and/or quick and easy weekday breakfasts.
Mini Breakfast Pizzas are going to be the next big thing . . .

I’ve been reeeeeally into breakfast lately.
Like.
Give me a runny egg and I’m good to go, you know?
Trevor, on the other hand, has been reeeeeally into pizza lately.
If you’re married, then you know one of the keys to happiness is compromise.
And THAT’S how this Mini Breakfast Pizzas Recipe was born.
I wanted breakfast. Trevor wanted pizza.
Mini Breakfast Pizzas it is!

Compromise!
And what a delicious, delicious compromise.
All you’re going to do is take your favorite pita bread, top it with your favorite pesto, add some Jones Dairy Farm All Natural Golden Brown® Mild Pork Breakfast Sausage Links, and a sprinkle of shredded mozzarella.
Next, top the pizza with an egg, a touch of salt/pepper, and a dash of grated parmesan.
Then, you’re going to bake it in the oven until the bread is slightly crispy, the cheese is melty, and the egg is perfectly runny.

Mini Breakfast Pizzas Recipe
Equipment for this recipe
Ingredients
- 1 whole wheat pita bread
- ¼ cup pesto
- 1-2 links Jones Dairy Farm All Natural Golden Brown® Mild Pork Breakfast Sausage Links sliced
- ¼ cup shredded mozzarella
- 1 large egg
- salt to taste
- pepper to taste
- parmesan finely grated
Instructions
- Preheat oven to 400 degrees F, place the baking rack on the top rung, and line a baking sheet with a silicone mat.
- Place pita on baking sheet.
- Top with pesto, sliced sausage links, and mozzarella.
- Crack an egg in the center of the pita and season with salt, pepper, and a sprinkle of grated parmesan.
- Bake in preheated oven for 10-20 minutes, or until the egg is cooked to your liking.
