I love these Lucky Charms Marshmallow Treats, because they’re crunchy, they’re a little salty, so buttery, and hello, there are TWO kinds of marshmallows!

Happy Leap Day! February is my favorite month – hellloooo birthday month – so I especially love when Leap Day rolls around, because that means I get an extra day to celebrate.

Today, we’re celebrating in a few ways. First, we’re celebrating with these Lucky Charms Marshmallow Treats.

Holy yum.

That’s all I have to say.

But hold up. I said Lucky Charms Marshmallow Treats. Yeahhhh.

Let’s talk about that for a second. It’s a twist on my very favorite Rice Krispie Treats and letmejustsay these are even better.

Four ingredients + less than 10 minutes = easiest, marshmallowiest, most colorful dessert ever and as I’m typing this, I’m enjoying the very.last.one. 😭

But have no fear, because like I said, easiest.dessert.ever.

Sooooo the first time I made these Lucky Charms Marshmallow Treats, I used double the amount of marshmallows. If you follow me on Snapchat (username: showmetheyummy <– dooooo it), you know that I discovered that there actually is a thing called too many marshmallows.

I never thought it could be true, but just trust me, there is.

Liiiiike it was actually disgusting.

H.O.W.E.V.E.R.

I tried again and cut back on the marshmallows.

Now. They are P.E.R.F.E.C.T.

All you need is Lucky Charms cereal, salt, butter, and marshmallows!

Then all you do is melt butter in a large pot, stir in salt and marshmallows until melty, and then stir in the Lucky Charms cereal.

Pour it in a pan, gently press down, and that.is.it. my friends.

So easy. So marshmallowy. So delicious.

I love these Lucky Charms Marshmallow Treats, because they’re crunchy, they’re a little salty, so buttery, and hello, there are TWO kinds of marshmallows, um, because there’s marshmallows IN the cereal. Which, btw, you can eat Lucky Charms for breakfast, which means, you can totally eat these Lucky Charms Marshmallow Treats for breakfast, too, riiiiiiight???? Just. Don’t ask questions.

You can definitely make these marshmallow treats any time, but I actually thought these would be super fun to make for St. Patrick’s Day!

Last year, I made these cut out sugar cookies with cream cheese frosting. Yeahhh. You should make those, too.

Big or small, I love all holidays. Thanksgiving, birthdays, Groundhog’s Day, St. Patrick’s Day, Fridays ;), whatever. I love them all. Really, I’ll take any excuse to celebrate with good food, good drinks, and good company.

So this year on St. Patrick’s Day (btw – it’s March 17th), you’ll surely find me snacking on these Lucky Charms Marshmallow Treats and being oh so happy about it.

Ingredients

US Customary - Metric

• ▢ ½ cup unsalted butter
• ▢ ½ teaspoon salt
• ▢ 1 (16 oz) bag Mini marshmallows
• ▢ 1 (11.5 oz) box Lucky Charms cereal

Instructions

• Grease a 9x13 in pan with cooking spray (or two 8x8 inch pans if you want thicker bars).
• Melt butter over low heat in a large stockpot.
• Once butter has melted, stir in salt and mini marshmallows.
• Stir constantly until melted.
• Once the marshmallows have melted, remove from heat and stir in cereal.
• Stir gently so you don’t crush the cereal.
• Pour mixture into prepared pan and GENTLY press in evenly. If you press too hard, you’ll end up with hard marshmallow treats.
• Allow to cool completely before cutting into squares.
