What better way to kick start the week than with this super easy, super not messy (we’re talkin’ ONE dirty dish, people!), super tasty Jalapeno Popper Mac and Cheese.
I’m drooling just thinking about it, but sad day, because Trevor ate ALL the leftovers.
Woooomp. Womp.
I mean. I’m a little bummed, because this mac and cheese is seriously so delicious, but I AM happy he loved it so much, and it truly is one of the easiest dishes I’ve ever made.
And I promise, you’re gonna love it, too. This Jalapeno Popper Mac and Cheese has all your favorite popper components: jalapeños, bacon, cream cheese AND is combined with the all time favorite: mac and cheese.

Before we get in to this recipe, I just want to talk about this past weekend a little bit. If I were to describe this past weekend in one word it would be: whirlwind.
Thursday – Saturday, Trevor and I were filming all the “how to make videos” courses for The Blog Village. I’m so excited for you guys to check them out once The Blog Village launches, but man oh man, I’m glad they’re all filmed and ready to go!
After Saturday’s film sesh, Trevor, Teddy, and I decided to go to this cute little place called Hollander and we had margaritas and fries while enjoying this GORGEOUS spring weather.
After that, we went home and literally went to bed at like 8 PM.
On Sunday, we woke up refreshed and were guests on a podcast with Josh and Stasia from Our First Drink that’s going live later this month. They were absolutely AMAZING! We had such a blast talking with them about our journey and how we work together as a couple. So now. It’s Monday and I’m actually welcoming it with open arms. With all the weekend craziness, I’m really excited to get back to my normal schedule of writing, social media-ing ;), and getting back into the kitchen. . .

Ready to see how easy this is?
Step One: Cook bacon and jalapeños together until they’re crispy/tender delicious.
Step Two: Dump a bunch of other stuff into your stockpot: broth (veggie or chicken), milk, pasta shells, salt, pepper, and garlic powder. Let this cook until the pasta is al dente.
Step Three: Stir in mayo, sour cream, cream cheese, and sharp cheddar cheese <– that combo. I die. So good.
Step Four: Try to get a bite of this Jalapeno Popper Mac and Cheese while your husband literally stands over the stove eating all the macaroni.
As you can see this Jalapeno Popper Mac and Cheese is crazy easy to make and I just love how it’s all made in the same pot! I know a lot of you have tried and loved my One Pot Mac and Cheese, and I know you’ll love this Jalapeno Popper Mac and Cheese just as much.

Equipment for this recipe
Ingredients
- 3-4 slices bacon diced
- ½ cup Jalapeños diced
- 3 cups broth chicken or vegetable
- 2 cups skim milk
- 1 (16 oz) box medium pasta shells uncooked
- 1 teaspoon salt more or less to taste
- ¼ teaspoon black pepper more or less to taste
- 1 teaspoon garlic powder
- ¼ cup mayo room temperature
- ¼ cup Sour cream room temperature
- 4 oz cream cheese room temperature
- 4 oz shredded Sharp Cheddar Cheese room temperature
Instructions
- In a large stockpot, cook diced bacon and jalapeños together over medium heat, until bacon is cooked, about 5-7 minutes.
- Slowly whisk in broth.
- Stir in milk, shells, salt, pepper, and garlic powder.
- Over medium/medium high heat, bring mixture to a simmer and simmer for about 7-10 minutes or until noodles are al dente.
- Lower heat to low and stir in mayo, sour cream, cream cheese, and cheddar cheese.
- Serve immediately and enjoy!
