This Easy Chocolate Fudge is smooth, rich, and creamy! Made with 5 ingredients and cooks in the microwave in under 2 minutes! The perfect holiday treat.

I’m back with another scrumptious one-bowl dessert. This easy chocolate fudge is ultra smooth, creamy, EXTRA chocolatey, and so. darn. yummy.

This fudge recipe is actually one that was passed down from Trevor’s side of the family. His grandma heard the recipe on a radio talk show in the car while her husband was driving, so she scribbled it down, and tweaked it from there! And now, here we are!

Who’s excited? I know I am. 😉

What is chocolate fudge?

Fudge is a type of soft candy that is made by heating sugar, chocolate, butter, milk, and other flavorings together. Most recipes require a stove and a candy thermometer, but this fool proof recipe uses a microwave (and no thermometer) instead!

Ingredients

There are only 5 ingredients in this easy chocolate fudge recipe. Normally fudge is made with sweetened condensed milk and chocolate chips, but for this recipe we will be replacing those with powdered sugar and cocoa powder.

  • Powdered Sugar – the base of our fudge and our sweetener! Powdered sugar is used rather than granulated sugar to make this fudge ultra smooth and creamy. Granulated sugar wouldn’t dissolve which would make for a very gritty fudge. Powdered sugar is also called confectioners’ sugar.
  • Cocoa Powder – is unsweetened and provides the fudge with a rich chocolate flavor. Either natural cocoa powder (what you typically see at the grocery store and often labeled simply with “cocoa powder”) and dutch cocoa powder will work just fine in this recipe.
  • Butter – melted into the fudge to add a creamy texture and rich buttery flavor. The original recipe calls for unsalted butter, but salted butter would also be fantastic, especially if you love a little salt with your sugar!
  • Chocolate Milk – thins out the fudge just a bit to make the perfect creamy, but not too thick texture. Any milk should work just fine — skim milk, flavored creamer, non-dairy milk —  but I love the extra chocolate flavor and richness from using chocolate flavored whole milk.
  • Vanilla Extract – makes the fudge pleasantly shiny and adds a warm depth of flavor. Pure vanilla extract is preferred for this no-bake recipe, but imitation will be fine in a pinch. Pure vanilla is made with vanilla bean, water, and alcohol whereas imitation vanilla is made without vanilla beans. Imitation is cheaper, but I prefer pure vanilla extract in this particular recipe, because it’s flavor is very pronounced.
  • Chopped Pecans (optional) – or your favorite chopped nut! Nuts add a delicious crunch and nutty flavor which contrasts the smooth, richness of the fudge.
Pro tip
Don’t have chocolate milk, but want that chocolate flavor? Make your own chocolate milk by stirring chocolate syrup into milk until dissolved.

How to make

This microwave fudge is simple, delicious, and made in 90 seconds!

  1. Sift powdered sugar and cocoa powder through a sieve into a large mixing bowl. Powdered sugar being sifted through sieve

Pro tip
Sift your powdered sugar and cocoa powder with a fine mesh sieve to remove any lumps. This makes the fudge extra smooth!

Can i make fudge on the stove?

Yes. To make this fudge on the stove:

  1. Pour an inch or two of water into a saucepan, then bring to a simmer.
  2. Place sifted powdered sugar, sifted cocoa powder, butter, and milk into a large glass bowl, then place the bowl on top of the saucepan with simmering water.
  3. Cook, whisking regularly, until the butter has melted, and the mixture is smooth.
  4. Remove from heat, stir in the vanilla and optional chopped nuts, then pour quickly into prepared pan.
  5. Chill as directed and enjoy!

Can i use a different kind of milk for fudge?

You can substitute the chocolate milk for any other milk (besides buttermilk or sweetened condensed milk). Try plain whole milk, flavored creamer, evaporated milk, 2% milk, skim milk, or your favorite non-dairy milk or creamer!

If you’d like to use chocolate milk, but don’t have any on hand . . . make your own!

  1. Combine whatever milk you have on hand with chocolate syrup.
  2. Whisk until thoroughly combined.
  3. Taste and add more chocolate or milk until the desired chocolate flavor is reached.
  4. Measure out 1/4 cup of the homemade chocolate milk and proceed with the recipe.
Pro tip
You could even try leftover cooled hot chocolate!

Does the weather affect fudge?

It can. If you’re making your fudge on a humid day, chances are it will take longer to set in the fridge. Be sure to store the finished fudge in the fridge for best results.

Why didn’t my fudge set?

If your fudge didn’t set, here’s what may have happened:

  • You didn’t cook it long enough. Make sure everything is completely melted (no butter chunks) before transferring the mixture to a baking dish. The wattage on your microwave may be less than mine as well. In that case, try adding an additional 30 seconds to the cook time.
  • You under-measured your powdered sugar. The powdered sugar helps the fudge firm up. Make sure you measure it correctly! Buy a 1 pound bag of powdered sugar, then there’s no measuring necessary!
  • You over-measured your milk or butter. Too much liquid and the fudge won’t set properly.
  • It didn’t cool long enough. Patience is key. Your fudge may take longer to set in the fridge if it’s a hot day, the kitchen is warm from the oven, or if your fridge isn’t as cold as mine.

Personally, I’ve never had an issue with my fudge setting and I’ve made this at least a dozen times!

Variations

  • Nuts. I love the optional addition of chopped pecans but you could also try chopped walnuts, pistachios, almonds, macadamia nuts, etc!
  • Chocolate Chips. After the fudge mixture is melted, stir in milk chocolate chips, semi-sweet chocolate chips, dark chocolate chips, peanut butter chips, white chocolate chips, or toffee chips.
  • Dried Fruit. The tart flavor and chewy texture of dried cranberries or cherries would contrast the sweet, creamy fudge beautifully.

  • Orange Zest. Add some orange zest to your fudge mixture for a little tang.
  • S’mores. Stir in some mini marshmallows and chopped graham crackers before refrigerating your fudge.

How to store

Leftovers can be stored in an airtight container at room temperature for up to 1 week, the refrigerator for 1 month, and in the freezer for 6 months.

If frozen, let your fudge thaw in the fridge before enjoying again!

Pro tip
If storing fudge at room temperature, be sure it’s in a dark, cool spot — the kitchen can get toasty during the holiday season!

Ingredients

  • 1 (1 pound) bag powdered sugar sifted
  • ½ cup cocoa powder sifted
  • ½ cup unsalted butter cubed into small chunks - 1 stick
  • ¼ cup chocolate milk or "regular" milk
  • 1 tablespoon vanilla extract
  • ½ cup chopped pecans optional

  • Line a 6 x 8 (or similar sized) pan with parchment paper misted very lightly with cooking spray. Set aside.
  • Place powdered sugar, cocoa powder, cubed butter, and milk into a large bowl.
  • Microwave for 90 seconds or until the butter is melted.

  • Whisk in vanilla and optional nuts.
  • Pour into prepared pan, cover, and chill in the refrigerator until set.

    5 stars This is deliciously easy recipe and the only one I use. The chocolate milk adds extra yum. I use orange flavoring for a chocolate orange taste that is delicious and a packet of instant espresso for a lovely coffee mocha flavor and add choc covered coffee beans to top for my coffee loving friends! I make a thin graham cracker crust(bottom of pan only, add fudge then mini marshmallows, lightly toast with kitchen torch and drop a light dusting in marshmallows for a delicious s’mores fudge! The recipe lends itself well to as many variations as you can dream up!

      Are you wanting to know how much orange extract? I don’t know how strong it is, so I’d start with 1/4 teaspoon and add more to taste!

    4 stars Tastes good…. However, it has been two days and it’s still too soft to hold a piece in your fingers without it drooping. I thought at first that I didn’t microwave it enough, and that could indeed be the case. Today, just as an experiment, I put some in a small bowl and microwaved it again, a total of 90 seconds. It actually boiled this time, but, it’s still not firm. My measurements were spot on, I followed the recipe precisely also. As I live in Puerto Rico, the humidity is through the roof, might that be a factor?

    5 stars Wouldn’t it be easier to melt the butter and add all the liquids separately instead of putting it’s all in the microwave? Also I think adding a little salt is great. Helps cuts the sweetness a bit.

      Hi Carla! I’ve never made this on the stove, but I’ve never had the sugar not dissolve…I’d try microwaving it for a bit longer, your microwave might not be as powerful as mine, try adding in additional 30 second intervals. As long as the butter has melted you should be fine! Check out the videos for visuals, it’s very thick!

    5 stars This is the real thing – and simple – and very good! I am picky about my fudge! Perfect success first time. I used walnuts. Real butter and vanilla, and half-and-half. And I used 1/2 cocoa powder and half Special Dark cocoa powder! It took a little longer to cook well, maybe 2 to 2 1/2 minutes. Whisk extra for smoothness. Wonderful – and easy – this is a keeper!

    5 stars I am an old-fashioned original Hershey cocoa fudge girl. Grew up on it and been making it all my life. I also live in high altitude. It takes work to make old style fudge. I do not like the cheater fudge with sweetened condensed milk, nor those made by melting chocolate chips. But sometimes, especially when the weather will not allow fudge to come out, I NEED FUDGE! So glad I came across this, it still has the good old cocoa chocolate taste but without the hard work. I have a 900 watt microwave and used a very heavy duty pyrex mixing bowl. I did 2:00 minutes at 50% power and that was not cutting it so did 1 more minute at 80% power. In the fridge for 3 hours and it is wonderful! Will soften a bit at room temp, just keep it in the fridge between bites. Thank you for the recipe.

      5 stars I am anon So here is how I tweaked this. I halved the recipe, except for the milk. In a 1/4 measuring cup, I put 1/3 of that with condensed milk, 1/3 of it with evaporated milk, 1/3 with coconut creme (canned). Then, when everything was melting in the pan beautifully, I chopped up 14 large marshmallows, and a generous handful of shredded coconut and added that. so, that was 2 cups of confectioner, 1/2 cup of real butter salted, 1/4 cup of cocoa, and as I said, i broke up the 1/4 cup of milk into three milks in the one cup, then added that after the sugars had warmed, and the butter melted. I did not have a double boiler, or a glass bowl, so i used a very large pan, (Non-Stick) and just preheated it. I stirred everything constantly without stopping. It all was so silky and was already setting up, and it gelled perfectly. I kept it in the freezer, now, nicely cut up to take out when guests come, or i need a quick decadent present~! If you use the regular measurements, then you would just fill a half cup with the same three different milks equally and use one whole stick of butter, and the rest as it says. I did not have cling wrap, so, I cut up two gallon freezer bags, then rubber banded around my pan, which I lined w foil. Worked Great!

    5 stars I love your method that part was simple. I should have read all the post before starting. First I doubled the batch, I had no milk only sweetended condensed milk. I did not see you said not to use it. Now I have a hard dry brick. Is there anyway I can redeem it? I have whipping cream and low fat milk in the fridge. You help would be so great right about now. I need to redeem this before I give my cookie/candy trays.

      I hope you aren’t going to throw it out tho! Knowing me, I’d probably try to melt it and add a little milk or something to soften it, then see if it’ll set up. Or I’d probably make small chunks out of it and use the chunks in brownies or chocolate chunk cookies. Or, I’d just melt it all the way down to be a sauce over ice cream or something.

      No, sorry! You could maybe try coconut oil, because it firms up when chilled like butter does, but I can’t guarantee the results.

      5 stars I made it again today. I used soy milk. It was too thick so I thinned it with a no sugar almond milk creamer – hazelnut flavor. It set up just fine and is yummy.

      Just sift the 1 pound bag of powdered sugar… no measuring necessary. As for the cocoa powder, I sift after I measure.

    5 stars This is great. I used the stove top since my microwave is on the fritz. I added my butter and milk to the pan and heated on medium heat until butter was melted and mixture was steaming. I then added it to the dry sugar mixture and mixed until smooth and creamy. I added the vanilla and mixed again. Then poured into pan and refrigerated 4 hours till set! It was gorgeous!

    5 stars To make a firmer fudge, I added 1 – 2 squares of chocolate bark. No other ingredients or measurements change just add and melt with the rest of the recipe. It sets up harder just like stovetop Hershey cocoa fudge. I no longer make stovetop fudge

    5 stars I’ve made this one several times now and I can’t believe how easy and good it is! I also modified this recipe to make lemon and raspberry fudge which was also amazing. I just substituted more powdered sugar for the cocoa and used lemon juice instead of milk, same amount of butter and no vanilla, super easy! For the raspberry fudge I did the exact same thing except I cooked some raspberries in lemon juice for a bit and strained them to use in place of the plain lemon juice. Can’t wait to try more variations, like orange cream, pineapple coconut, blueberry…the possibilities are endless.

      Hi! You can cut the recipe in half. I’m not sure the microwave time but I’d just do it in 30 second increments until it’s fully melted and smooth when you stir it 🙂 hope that helps!

      Sweetened condensed milk is so much thicker than “regular” milk, I wouldn’t recommend using that has a substitute.

      You can just use plain milk or mix plain milk with chocolate syrup to taste 🙂 Cocoa powder wouldn’t work, because it won’t mix well with the milk and there’s no sugar in it, so it would be very bitter!

    Hello I am going to try this. Can you tell me why it calls for sifted powdered sugar and cocoa?. I am not a cook lol can you tell. Also when I make truffles it called for unsalted butter I used salted made no difference. Was great. What is the reason for unsalted? Thanks making this for my sister she’s 87 .

      Sifted ingredients removes lumps, so it’s nice and smooth 🙂 Unsalted just allows you to control the amount of salt in the recipe… doesn’t make too much of a difference.

      You can just make homemade chocolate milk (stir a little chocolate syrup into milk and then measure out the milk) or you can just use regular milk 🙂

    Hi When you say chocolate milk, do you meant store bought chocolate milk that usually has thickeners or homemade- milk with some chocolate syrup. I wonder if the reason some people have runny results is that they are using homemade chocolate milk that does not have the thickeners.

      Either works! I’ve done both. I feel like people who have runny results are under measuring there powdered sugar or have a lower wattage microwave and therefore undercooking their fudge. 🙂 Or they’re not letting it set in the fridge long enough!

    5 stars I am on a quest for the perfect fudge I don’t have to use marshmallow in (feels gritty to taste) or stand over a double boiler. When I saw this I was struck with the thought it’s my chocolate frosting recipe. The only difference is the chocolate milk! Well, why not? I’ll make this up ASAP! If you want a great frosting use more milk, or even coffee, for a slight java blast. Can’t tell you amounts, just “til it’s right” as my mother used to say.
