This Caramelized Onion and Mushroom Pizza is *almost* as easy to make as it is to eat. 😉 Thin crust topped with onions, mushrooms, spinach, tons of cheese, and a little thyme!

Whoa.
That was my initial reaction as I took my first bite of this Caramelized Onion and Mushroom Pizza.
The ingredient list is so simple, I wasn’t expecting SUCH a flavor bomb of deliciousness.
I mean, of course I thought it was going to be delicious, I mean, helllloooo we’re talkin’ about pizza here, but I mean this is like really really REALLY good pizza.
This would be perfect for your Friday Night Pizza Night dinner, a Meatless Monday leftover lunch, or even as a great, easy holiday appetizer.
Really.
You could and should just eat this Caramelized Onion and Mushroom Pizza for all your meals.
Trevor’s definitely one of those people that could eat pizza for breakfast, lunch, and dinner.
We typically get take-out or delivery once a week and while I like to mix it up with Thai, Chinese, and Indian Food, Trevor’s first choice would ALWAYS be pizza.
Me?
If I’m going to eat pizza, I’d rather skip the delivery and make homemade pizza instead.
This Caramelized Onion and Mushroom Pizza Recipe, for example, tastes WAY better than delivery, and it’s *almost* as easy. 🙂
As all good pizza’s do, this pizza recipe starts with a killer crust.
Today, we’re using one package of Pillsbury’s Best™ refrigerated thin crust pizza dough.
You guys.
This crust is legit.
Typically I’m not a thin crust pizza kinda girl, but this crust honestly blew me away.
It’s SO convenient, because all you need to do is unroll it, brush it with a little oil, and bake it in the oven. It even comes wrapped in parchment paper that you can bake on. #easycleanupwinning Best yet, it’s fresh and made with clean ingredients!
While the crust is baking, you’ll make the caramelized onion mushroom topping <– drool.
- Melt butter in pan.
- Add in onions and cook for a few minutes.
- Add in a little more butter.
- Throw in some mushrooms and cook for a few minutes.
- Add in garlic, salt, pepper and that’s it!
By that time, your crust with have finished baking, so you’ll remove it from the oven and top it with the onion/mushroom mixture. Top THAT with baby spinach, parmesan, and mozzarella, and throw the pizza in the oven again until the cheese is golden, melty, and delicious!
The last two steps are easy:
- Garnish with fresh thyme and crushed red pepper flakes
- Devour the entire pizza in one sitting <– not speaking from experience or anything. 😉
As you can see, this pizza is quick and easy and I PROMISE you, you’ll be as blown away by the flavor as I am.
I absolutely LOVE the sweet caramelized onions with meaty mushrooms, garlic, gooey cheese, and the finishing touch of thyme really brings it all together.
Easy. Flavor bomb. Pizza.

Caramelized Onion and Mushroom Pizza
Equipment for this recipe
Ingredients
- 1 (8.21 oz) package Pillsbury’s Best™ refrigerated thin crust pizza dough
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter divided
- 1 cup thinly sliced yellow onion
- ½ teaspoon salt plus more to taste
- pepper to taste
- 1 (8 oz) package sliced mushrooms
- 2 cloves garlic minced or pressed
- 1 cup baby spinach leaves slightly packed
- 1 ½ cups shredded mozzarella cheese
- ½ cup shredded parmesan cheese
- Fresh thyme leaves for garnish
- Red pepper flakes for garnish
Instructions
- Pre-heat oven to 425 degrees F.
- Unroll dough with oven-safe parchment paper onto an ungreased large cookie sheet (the dough bakes on the paper).
- Brush with olive oil and bake 7 minutes.
- Remove from oven.
- Melt butter in a large non-stick skillet over medium-high heat.
- Once melted, add onions and salt.
- Cook 5 minutes, stirring occasionally, until onion has started to soften.
- Add mushrooms and cook 7 minutes or until mushrooms and onions are golden brown and soft.
- Stir in garlic and remove from heat.
- Taste and re-season, if necessary.
- Spread mushroom mixture evenly over dough.
- Evenly sprinkle with spinach, mozzarella cheese and parmesan cheese.
- Bake for an additional 7 to 12 minutes or until cheese is melted and crust is golden brown.
- Garnish with thyme and red pepper flakes.
