Ingredients
  • 1 cup Bob’s Red Mill Organic Farro cooked in vegetable broth according to package directions
  • 1/4 cup diced red onion
  • 1/2 cup diced red pepper
  • 1/2 cup diced green pepper
  • 1/2 cup diced cucumber
  • 1/4 cup kalamata olives chopped
  • 2 cloves garlic minced or pressed
  • 1/4 cup crumbled feta optional, omit if vegan or dairy free
  • 1/2 cup chickpeas drained
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon salt more or less to taste
Instructions
  1. Place all ingredients in a large bowl.
  2. Stir to combine.
  3. Cover and chill in fridge until ready to serve!
  4. Taste and re-season, if necessary, before serving!
Recipe Notes

This is a GREAT make ahead dish. This can be stored in the fridge for up to 5 days.

Omit feta if vegan or dairy free!
